Currently undergoing a multimillion-dollar renovation, this iconic downtown Kingston Waterfront Hotel will see a complete transformation – guestroom upgrades shifting to upscale contemporary lines, modernization and repositioning of the dining experience both inside and on the patio – the only waterfront restaurant in the city! Public areas and event spaces will see significant changes to enhance the overall guest experience.


For this new and exciting opportunity, the Executive Chef will spearhead integral changes to the culinary soul of the property by transforming all facets of the Food and Beverage operation. With the leadership and support of the General Manager, the Executive Chef will be tasked with bringing the hotel to the forefront of the culinary scene in Kingston through innovation, creativity and strong mentorship of the culinary team. By tapping into a wealth of locally sourced resources, Kingston will afford the candidate many sources of inspiration, regardless of season. The Executive Chef must be both passionate and entrepreneurial in their mandate to successfully direct the operation of the kitchen. They will seek out public engagements to promote the hotel and themselves while working to become a recognized member of the greater Kingston culinary community.

The Executive Chef will be responsible for all facets of the culinary operation, including but not limited to food preparation and quality, physical maintenance and inventory functions, all while ensuring hotel quality standards and revenue goals are met and food and supply costs are controlled. The goal is to maximize sales and revenue through customer satisfaction and employee engagement.

Salary: $65k – $75k (per Annum)

Job Requirements

Languages: English

Education: Completion of a certificate in culinary arts. Extensive years in the industry can substitute any education requirement.

Experience: 5 years or more experience in commercial food preparation, including two years in a supervisory capacity with experience in, either, an Executive Chef/Sous Chef/chef.



Safe Food Handling certificate (can be obtained and provide within 3 weeks of commencing employment);

Red Seal Journeyman Certification OR industry training OR equivalent experience.

Duties and Responsibilities include, but not limited to the following:

·       Innovate and create new recipes, methods and presentations and improve food and presentation quality, develop & plan menus to remain current with trends, for all food and/or bar outlets and catering events.

·       Monitor competitor and industry trends and work with local media and social influencers to promote the hotel and the restaurant.

·       Manage all aspects of the kitchen including operational, quality and administrative functions.

·       Manage day-to-day kitchen activities, plan and assign work and establish performance and development goals for team members.

·       Provide mentoring, coaching, training and regular feedback to help manage conflict and improve team member performance.

·       Adhere, educate and train team members in compliance with brand standards, service behaviours and governmental regulations.

·       Ensure staff has the tools, training and equipment to carry out job duties.

·       Maintain a clean and sanitary work environment, helping ensure the health and safety of guests and associates.

·       Maintain procedures to ensure the security and proper storage of food and beverage products, inventory and equipment. Replenish supplies in a timely manner and minimize waste and pilferage.

·       Manage the daily duties and responsibilities of the stewarding team.

·       Maintain records of food costs, consumption, sales and inventory, analyze operating costs and other data and ensure food costs, operational, and labour costs are in line with budget and revenues.

·       Prepare dishes for customers with food allergies or intolerances, when necessary.

·       Prepare and cook meals or specialty foods for special guests or functions, when necessary.

·       Responsible for completing month end inventory and requisition food and kitchen supplies

·       Ensure that all menu items are prepared and presented according to established recipes and standards.

·       Recruit and hire staff

·       Monitor and control food costs as per company standards and estimate food requirements and labour costs, ensuring that the costs are in line with budget and revenues.

·       Ensure that all kitchen equipment and storerooms are in proper operational condition and are cleaned on a regular basis.

·       Supervise activities of sous-chefs, specialist chefs, chefs and cooks

·       Arrange for equipment purchases and repairs

·       Solicit guest feedback, assist with addressing customer questions and issues relating to kitchen services.

·       Promote teamwork and quality service through daily communication and coordination with other departments. Assist sales, catering and banquet staff with banquets, parties and other special events.

·       Other duties as assigned by Management.
